Anchovy Fry

Ingredient
- 500g anchovy
- 1tsp ginger paste
- 1tsp garlic paste
- 2 tbsp chilli powder
- 1tsp pepper powder
- 1/4 garam masala
- 1 1/2 lemon juice
- 2 tbsp corn flour
- 1 Tsp rice flour
- 1 all purpose flour
- Curry leaf
- Salt
Method
- Wash the anchovies and check for any scales or cut witch is not cleaned and wash it twice.
- Once the fish was cleaned using colander drain excess moisture allow to rest in the sink itself to drain excess moisture for 10 mins.
- Transfer the fish into a mixing bowl. Add all the dry ingredients and mixed well.add lemon juice and mixed again.
- Cover and and allow the fish to marinate on kitchen counter or refrigerate for 1 hr.
- Heat enough oil in a wok on low to medium flame. Once oil heats and drop a batch of eight to ten pieces of fish in oil and fry on low medium flame for 2 minutes each side.
- For crispy texture fry the fish for six to eight minutes on low flame. Once fish had fried drain from oil and reserve on a plate lined with oil observant paper, once the oil has drained serve hot.
